Cookin’ the Book: Pioneer Woman’s Breakfast Potatoes

Onward with my quest to try all the recipes in The Pioneer Woman Cooks. I’m attempting to cook every one of her recipes (in the book, not her site!)… and slowly the check marks in the book are accumulating… SLOOOOWLY.  Summer is busy here, man.
We’ve been getting some amazing red skinned potatoes from my CSA lately, so this was a recipe I could whip up without any effort at all.  It is easy to make for a weekend breakfast and could be multiplied to feed a crowd.
The verdict?  Exactly what you expect from home fries.  Nothing fancy, but yummy.  Thumbs up.  Hey, this one is on her site, too – so look HERE for the recipe and photos of preparation… and enjoy.
